We planned a trip to Vermont to see our daughter and attend a concert with her on the waterfront in Burlington. Our daughter had invited us to stay at her place and so we were going to cancel our hotel, but missed the deadline, so stayed at the hotel--It was an expensive mistake but we made good use of the space when our daughter brought over a quiche and some pastries for breakfast. There were 4 of us and it would have been a crowd in her little apartment.
The quiche was really good and there's more ways for a quiche to go wrong than right, but she got it all correct: Good crust, not over or under cooked eggs, the filling was properly cooked--mushrooms, leeks, pancetta and plenty of greuiree.
We had dinner at a place by the train station and coincidentally, after many dozens of trips between Boston and Burlington, we saw the Amtrack running alongside of us on the way home for the first time.
Another first: We swam in the Winooski River at the swimming hole in Richmond. We had lived walking distance from the river for 4 years in Burlington, but never went for a swim, though we swam in Lake Champlain a lot.
The concert was great! We saw a lot of her friends there and the venue is really good.
